Cooking with Locally Grown Wild Mushrooms
We continue with our series 'Cooking locally grown, seasonal food'. In this ocassion we are going to use 'wild mushrooms' as our main ingredient which is grown in the Catalan forests throughout autumn.
The main idea is to teach you how to preserve this vegetable in olive oil and some other secret ingredients :), so you can make it by yourself at home.
Each one of you will be able take away a jar of preserve.
Before to start making the preserve, we are going to have some appetizers and a glass of cava. Once we finish canning the preserve we are going to have one main dish using a viriety of wild mushroom that is available in the market that day. Cheese cake for dessert!
For the main dish, I let you vote if you want:
1) wild mushroom risotto
2) Beef stew with wild mushrooms
3) tagliatella with mushrooms
