The basics of Taiwanese cuisine are similar to Chinese: ingredients and cooking techniques. There are also many Japanese influences, but their cuisine is more fragrant, less oily and less salty. A mixture of cultures explained among other things by the colonization of Chinese territory by the Japanese for fifty years.
👉The most famous specialty? The "ba bao". This steamed bread, traditionally stuffed with pork belly, has been a real success in Europe since the opening of Bao restaurants in London.
Taiwanese dishes require special knowledge. "Xiao Long Bao" is a steamed ravioli with chicken or pork broth over low heat for two hours.
👉The Taiwanese people do not drink a lot of wine, alcohol is reserved for the party, explains the chef. "Oolong" is called blue tea. Thanks to its semi-fermentation, it contains only a low caffeine content, making it one of the most active on the island. They also have no dessert since the kitchen is already quite sweet.
Delicate and tasty, Taiwanese cuisine promises to make palates travel. It remains to prove it.
