Variety of Miso cooking for a Good Cause!
-Workshop by Mari Fujii, specialiste of japanese vegan Shojin (Zen Buddhism) cuisine-

Discover the variety of Miso cooking (more than 10 recipes)

With 4 kinds of miso ; Red miso from Sendai, White miso from Shinshu Nagano, Hatcho (soy bean) from Nagoya and Kyoto style sweet miso

With Tofu, seaweed and different types of vegetables (Green beans, eggplants, carrots, paprika, green peppers, cucumber, tomato, salad...)

With various seasonings & spices ; sesame seeds, sesame paste, ginger, shichimi hot peppers, lemon juice, walnuts, sesame oil, olive oil...)

Learn about the basic of Shojin ryori ; the importance of the balance (five tastes, colors, preparation) and the variety of cooking with Miso by Mari Fujii, the author of “Enlightened Kitchen”, who teaches naturally healthy shojin style vegan cooking more than 30 years.

10:30 – 12:00 : Explanation and practice/ preparation

12: Protected content : Lunch, tea and sweet

13: Protected content : Mini lecture and Q&A
