This time we will be eating Amatriciana, one of the typical recipes of Rome's working-class cuisine.
As a matter of fact, the recipe was invented in Amatrice, a village situated in a mountainous area in central Italy.
But Romans have adopted it and it is now ubiquitous in the Eternal City's trattorias.
You can cook it with spaghetti, but many prefer another type of pasta...
