Japanese White Miso Roasted Eggplant Zoom cooking class
Let's cook some an awesome vegan meal together on Zoom that leaves you feeling like you had a night out in a gourmet restaurant.
In this Japanese inspired cooking class, you will learn how to cook brocolli and white miso eggplant that is bursting in flavour and wonderfully nutritional. You'll learn a simple fool-proof way to make Gomazio, a secret seasoning with just 3 ingredients that gives you a wow factor ready at hand which you can sprinkle on just about any vegetable.
My wife Cristina (health coach) and I (restaurateur) have been running healthy and tasty Zoom Cooking classes since lock-down and it's been a blast!
Here's what you need.
2 medium or large eggplants
⅓ cup chopped fresh spring onions
1 tbsp sliced ginger (15g peeled)
3/4 tbsp fleur de sel or coarse sea salt
1 tsp ground black pepper
500g sushi rice
4 tablespoons olive oil
2 tbsp sesame oil or olive oil
1/2 cup of rice vinegar (optional)
4 tbsp white miso Protected content (brown miso paste will work too, but white miso works better with this recipe)
1 tsp red chili paste (thai curry paste also works well)
1 sheet seaweed nori 20cm x 15cm (optional)
1 tsp honey or maple syrup
2 tbsp rice vinegar
80g sesame seeds (unhulled /brown NOT white, see Gomazio recipe to understand the difference)
