Alternative tourism in Bologna

Hello Bologna guys. Can you help a not completely ordinary Danish tourist couple? Me and my friend are going to spend 4 full days in Bologna, 12.8-16.8. Apart from wining & dining (big time), we want to experience something different. We are thinking of renting bicycles, visiting a wine farm, listening to jazz and maybe attend a cooking school - private if possible. What is good, where should we go, who should we meet?
