Things to see and hotels in Dubai?

I am going to Dubai Protected content and would welcome ideas on things to see, where to eat and go out in general. Will be staying at least some of the time at Ritz Carlton for a business meeting but will have some days extra and also wonder if there are suggestions for other hotels.
