cooking school (Ho Chi Minh City)

Hi there. Does anyone know if there's a cooking school that offers short-term course to travellers (say one or two months)? I'd like to learn Vietnamese cooking in particular pho. My idea is to open a pho restaurant in my hometown later if possible. Ideally if I could learn it in a local pho shop and work for them in the mean time (no need to pay me just teach me how to make pho), that would be even better! Can anyone share with me some information on this? Thanks so much!
