First visit planning tips? (Hong Kong)

Hello HK InterNationals;
We're making a brief first visit to HK next week, and want to see if our arrival planning is correct. Please let us know if we are astray on any concepts here or if it would be prudent to do/plan something else:
1) Arrival at HKG, immigration, customs, baggage pickup.
2) Find a Cirrus ATM, get local cash; failing that, find exchange booth and change rupees (or USD?) to HK$.
3) Find the MTR, buy Octopus card for stay (or just round trip airport and get Octopus elsewhere?)
4) Airport Express to Central, switch to Island line for our hotel vicinity of Causeway Bay
Also wondering...
a) hotel offers a free mobile phone-is that a good deal or should we seek local micro/nano sim? best coverage provider for iphones?
b) border controls re electronics-are our laptop, camera chips, devices subject to inspection/seizure coming or going? We're only traveling on business/tourism but don't want our private/business data copied. Maybe excessively paranoid.
c) where to get printed street/transit map? airport? MTR?
