Looking for best places to see on my EU trip (Houston)

I am traveling to Stockholm, Gotheborg, Berlin, Prague, Copenhagen that are not totally tourist. Just give me a good idea where I can get a great local meal, see something sustainable or green, a great piece of architecture or other cool things you like.

I am leaving with my husband mid-May and would love to get your input. We are driving, so we will have a car.
