Vacationing in Istanbul in November 9-14

Hello,
My girlfriend (working in Russia) and I (working in Qatar) are planning a holiday to Istanbul, arriving on 9Nov and departing 14Nov.

I was wondering if anyone could recommend a bit of an itinerary and hotels? We're taking a break together and being tourists. We, of course, want to hit the mandatory tourist points - which seem to rotate days that they are closed, and are also looking at a 2day tour of Ephesus and Pamukkale. Plus the required American stops at the Hard Rock Cafe and the Harley Davidson dealership, and hopefully a Bosphorus (dinner?) cruise. Regrettably, it's all the time I have away from work until next year so, yes, a little shorter than I would prefer.

Can anyone recommend a good timeframe / which days for trying to hit all of that given 4 real days and two half days, considering when things are open vs closed and a good local tour group? Any good but not hideously priced hotels in Sultanahmet that have queen sized beds?
