Visiting Turkey for the First Time (Istanbul)

Hi all,

I'll be visiting Turkey for the first time from June 1-7. Can you recommend some must-see places in Istanbul or some other places in Turkey that are not the usual tourists spots? I'm very interested in culture, history, and enjoy the outdoors greatly. If you could recommend some good restaurants or activities in Istanbul, that would be extremely helpful too.
