In London, the recent opening of restaurants such as Lima and Ceviche popularised Peruvian food; Bolivian cuisine could be next in line for international attention. Claus Meyer, one of the owners of Copenhagen’s feted Noma, is currently developing the restaurant GUSTU in La Paz, part of the Melting Pot Bolivia Foundation. Due to open shortly – the exact date is as yet unconfirmed but it will be in “early Protected content – the fine-dining restaurant, bakery and bistro aims to “explore the diversity of Bolivian products and rediscover the values of the indigenous food cultures… in order to develop new culinary expressions that will become an asset to the food movement in Bolivia.” Bolivia is one of the poorest countries in South America and Meyer’s non-profit Melting Pot Bolivia foundation will use GUSTU profits to help vulnerable members of the population.
