Visiting Lisbon with a One-Year Old

Hi Lisbon Internations Members
I'm planning my first trip to Portugal with my husband and one-year old at the end of August. We will be there for about a week and we are considering renting an apartment or finding a kid friendly hotel. I have heard that Lisbon is pretty hill and can be difficult to navigate with a stroller. Are there any recommended areas to stay in per transport and walkability? Our kid is a NYC baby so noise does not bother him and we will likely keep him on a NYC schedule and just have him stay up until midnight Lisbon time. Are there eating/drinking places that likely won't mind a toddler in tow? We eat out alot in NYC but try to eat at off times or visit places that alot of families frequent. Are there other recommended sidetrips within a week? i.e Are Cascais and Sintra easy to do as a day trip or is it better to stay overnight? Thanks again! And so excited to visit this city!
