Im trying to make my chicken and sausage Jambalaya (a louisiana rice dish similar to paella) but have failed to find a proper smoked sausage similar to andouille sausage. The chorizos and other spanish sausage are way too oily when cooked.
Anyone have sausage suggestions and if so where to buy it?
