Rules and Regs on Food handling and new business (Madrid)

Hi, I am looking for some quick answers to a few questions relating to starting up a small business in the food industry. I need to know if there are any specific requirements or certificates that must be obtained before I can open for business. I plan to open a small juice bar for take away or delivery. I am looking for the most simple way to get started and with minimal outlay and minimal equipment etc. I have no idea where to start with the legal side of things but if anyone can help point me in the right direction or offer some advice over a coffee perhaps, I would greatly appreciate it - Perhaps in return for some english conversation or free nutritional advice and juices in the future :) Many thanks
