Best restaurants/activities in Malate? (Manila)

Hello everyone,
My girl friend and I have been here in the Philippines for around 5 months now.
We have yet to find any excellent restaurants or exciting activities here in Malate. We have tried most of the "top rated" restaurants located in Malate but so far they have been average at best.
Any suggestions and advice would be greatly appreciated
