Do you like your butcher? (Neuchatel Lake)

Hello,

Can anyone recommend a butcher? I peer in the windows around town but haven't ventured in. I'm looking for someone who is happy to make special cuts and grind up meat mixtures. If you have any recommendations please please let me know.

ps. where can I get animal bones (chicken, veal, beef) for stocks. I need 3-4.5 kilos of bones and Coop doesn't sell in bulk like that.
