Indian Cookery classes (Penang)

I am looking to learn some Indian cookery techniques from an experienced restaurant style chef. I don't mind which area of India. I am an experienced chef looking to widen my skillsets. Does anyone have any suggestions of great Indian restaurants which might allow me to learn for a few days in their kitchen or a good chef who would be interested in teaching for a couple of days?
