honey moon in Chile next month. (Santiago de Chile)

Hi Everybody,
My fiancée and I planning to spend our honey moon in Chile, we might start our vacation in the end of May/2016, we have no plan/arrangements so far but we want to spend the first week in Santiago then we would like to visit different parts of the country /as much as we could do in two months/, I did some research on the country and I have prepared a list of places to see:
Santiago, Valparaiso, Gigante de Atacama and Vale de Apaza in the Atacama Desert, Peulla and the Easter Island.

Also, we would like to spend some days in the mountains riding horses and hiking.

We are hoping that we could get some information in advance, about what to expect when we get there, what should we bring with us, about the weather in May, June, July.

Places and prices, any information would help.
