Filipino Favorites? Whats yours.

I'm a Filipino, a foodie and a travel writer and I love Filipino Food. But when you ask me what filipino food is, I'm not sure how to answer. Sisig? Sinigang? Adobo? Laing? The list goes on. I guess I'm too deep in it to see objectively which of our food stands out. So I'd like to get a foreigners view of it? What's your assessment of our culinary traditions? :D Do you find our food spicy like the rest of the South East Asia, or is it all oily spanish derivatives, or even a healthy mix of seafood and fruits. First impressions of our food are welcome.
