India -- a week in January

Hello All,
after visiting Bodhgaya and Varanasi I will have one more week to travel in India. What would be your suggestions, considering that I m starting from Varanasi and flying back from Delhi? Please note I am more into nature, villages/little towns and true local culture than into beaches, museums and cities.
