Learn Spanish in South America

Hi, I am considering going to South America for a few months, traveling around and taking spanish courses.
Can anybody recommend me countries/regions/places I absolutly need to see, and countries where people speak Spanish easy to understand and learn (heard Argentina is not the best place to learn spanish)?
