Road Trip Argentina

Hello
We're a Swiss couple planning a road trip in Argentina (3 weeks in Jan/Feb Protected content .
Any tips for authentic ranches (not touristic!!)?
Any tips for the perfect itinerary?
We are looking for a 'real' Argentinian experience. We would like to stay some days in Buenos Aires and then take off to the magnificent country side. Ideally we are looking for Protected content ranches where to stay, enjoy the gaucho life, learn about the culture, the wines, maybe even give a hand on the fields.
