South America - backpacking for 6 months

Hello everybody,
End of this year, I will go backpacking through South America (Chili, Argentina, Uruguay, Brazil, Equador & Galapagos, Panama and Costa Rica.
Any tips, recommandations of all kind are very welcome. (B&B, posada's, wine excursions, best hiking tours, local restaurants, domestic flight companies, etc etc)
