Travelling To Italy

I'm travelling to Italy on 15th of June with my family. I'll be in Milan for 3 days, Florence for about 5 and , Venice 1 day, Rome other 2 days.

We have planned out an interesting itinerary which includes - trekking through the cinque terre mountains, vineyard tours and wine tasting, cheese tasting, perhaps a one day cooking class with a local, a concert or the Opera, loads of eating and ofcourse shopping!

Can someone help me out with any specific names of vineyard tours or cheese tasting farms or certain restaurants that we must try? Although please consider that we are vegetarians. I would also like names of any special stores, boutiques, markets that are great for shopping.

Most of all, I would like help in looking for a local cooking class!
