LIVE: Catalan Country Spanish Omelette

In our November event, we would love to welcome our dear friend Montse and she will cook us LIVE with her special & delicious Catalan Country Spanish Omelette. We are giving the ingredients list below and as you wish you can cook with her at the same time in your own kitchen as well.
COUNTRY SPANISH OMELETTE (Montse Version)
Main ingredients :
1-and-a-half big fresh onion,
2 medium potatoes,
1 fresh red pepper,
1 fresh aubergine,
oil to fry -if olive oil better but whatever other oil to fry is useful-, salt and a medium-big non-stick pan.
To accompany like Catalan style: A glass of red wine with body, fresh rustic toasted bread, a garlic glove (optional), a mature tomato, salt and olive oil (of quality, we only need a small quantity). The country omelette or “Tortilla A La Paisana” is a variant of the well-known Spanish-omelette where, in addition to potatoes & onions as the main ingredients, vegetables are added. and in some parts of Spain also ham or chorizo sausage and sometimes even legumes. She chooses to leave it simple as finding the mixed vegetable flavours is delicious, especially the caramelised onion. An explosion to the mouth. For Montse, Spanish is also a ritual learn since childhood and that in her county always goes accompanied by the “Pà amb tomàquet” and a bodied red wine!
