Kashke Bademjan: A traditional Persian eggplant spread that goes great with flatbreads. This is a wonderful accompaniment to meals and is bound to be a guest favourite. Bademjan literally translates into eggplant in Farsi while Kashk refers to a type of Middle-Eastern dried yogurt. In our dish, the dairy yogurt is replaced with a homemade cashew version, making the dish healthier and dairy-free. Ground walnuts add creaminess and substance to this amazing dip.
