Travel advice or guidance

Hello

My brother Daniel is taking a break from study in Australia and is in Portugal visiting family. He wants to travel around Europe, working and exploring Europe before he visits me in Chicago.
He is happy to work voluntarily for room and board, or work in stores, food places, on farms etc etc. The point being he wants to explore a few countries in Europe and make some money while there.
Please email me if anyone has some advice on where he can find casual work. Countries my brother was particularly interested in were Spain, France, Italy, but he is open to traveling just about anywhere!
Is anyone happy to host a young Australian Portuguese man? Provide board and when there offer some easy directions as to where the sights of that particular country are located. Which bus to catch, where to eat, which sights he must see etc etc.
