This restaurant's chef was interviewed in La Nacion Revista. The article suggests that we should order the special inquiries or their omakase. The chef described how he uses "apio nabo" which is of the same family of the celery but a bit different and used mainly for the root. I have never been here, so who wants to join me on this voyage?
Please keep in mind that I have made a reservation for 8 because it is the maximum the restaurant allows. So if you aren't 100% sure that you will be able to make it out of respect for those that end up in the waiting list and more importantly the empty seats the restaurant will end up having don't sign up.
