Oaxacan food, declared by UNESCO as Intangible Heritage of Humanity, is characterized by its wide range of smells, flavors and colors, whose charms make it a delicious pleasure.
With a cuisine with pre-Hispanic roots, the gastronomy of Oaxaca is as delicious as it is diverse, offering us a wide range of dishes including tlayudas, tasajo, enfrijoladas, entomatadas or chapulines.
Oaxacan food: roasted, subtle, rich, layered. Moles, chocolate, tiny avocados that taste faintly like licorice, giant balls of quesillo cheese ribbons, grasshoppers, whopping Mexican pizzas, stunning grilled meats, corn fungus, mysterious herbs like epazote, and more types of chili peppers than you can shake a fire extinguisher at.
