We bring you Byzantium- a city that grew from an uninhabited piece of Paradise. The people of Byzantium were adventurous in their cooking and they were the first to invent the table fork; to eat rosemary with lamb, and add saffron to food, before then both were used only for medicine. They invented marzipan & and used spices abundantly. We now get a chance to sample a little of what their kitchen might have evolved to become.
MENU:
PLATE 1:
Grated Celeriac and horseradish in mayonnaise topped with deep fried battered mussels.
Puree of Butter beans with black garlic, topped with pulled lamb & rosemary.
Aubergine, red peppers & onions fried in eastern spices.
Tomato Consomme with cheese crouton.
PLATE 2
Filo pastry parcel with cured beef & cheese béchamel, served with a fig, rocket & walnut salad.
PLATE 3
Sous Vide Chicken breast marinaded in spices and apple juice on crushed herb potato & saffron vinaigrette.
DESSERT Spiced cake drenched in honey served with the cocktail called Byzantium (Gin, passionfruit, pineapple, tonic, basil and lemongrass).
