Autumn vegetable and fermented seasoning [Miso, Shoyu, Umeboshi, Shio-Koji, Amazake...]

Learn about the basic of Shojin ryori ; the importance of the balance (five tastes, colors, preparation) and the variety of cooking with autumn vegetable and fermented seasoning by Mari Fujii, the author of “Enlightened Kitchen”, who teaches naturally healthy shojin style vegan cooking more than 30 years.

10h30 – 12h : Explanation and practice/ preparation
12h- 13h: Lunch, tea and sweet
13h -13h30: Mini lecture and Q&A
