I’m starting my “consul era” with one neighbourhood at a time, one table at a time. There will be a mix of high end and more casual places. Pick your preferred ones. It’s company what matters. First stop Cabanyal.

It’s about enjoying the process in the kitchen and offering each guest the best dish made with the freshest, highest-quality ingredients from Valencia. The menu is small and designed to change with the seasons, but our wine selection is extensive — so every guest can find their perfect pairing. Aim to surprise people and make sure we build a lasting relationship with everyone who walks through our doors
