" The Spanish word, candente, means glowing, sizzling, full of life, it also means queso topped with chopped brisket, sea salt-rimmed margaritas" "Candente is a lot Tex-Mex as filtered through a smoky lens. The kitchen features wood-burning grills and one of the city's few Josper ovens, a charcoal-fire Cadillac of cookers. The Pit Room's popular dips into Mexican-influenced barbecue culture have resulted in Candete's full-fledged menu of iconic foods licked by mesquite smoke.
The menu's star attractions are the grilled meats and seafood such as Prime Niman Ranch skirt steak and ribeye fajitas; smoked half rack of ribs; grilled redfish on the half shell; grilled shrimp fajitas; pork carnitas; pollo asado; smoked and braised birria de res; and duck carnitas. Fajita add-ons include Pit Room jalapeno cheddar link, grilled quail, grilled shrimp and a poblano chile relleno"
