Tapas is a word derived from the Spanish verb tapar, which means 'to cover'. In pre-19th-century Spain tapas were served in lay-over hotels, offering meals and rooms for travelers. Since, back then, few innkeepers could write and few travelers could read, inns offered their guests a sample of the dishes available on a "tapa".
Tapas were originally thin slices of bread or meat which sherry drinkers in Andalusian taverns would use to cover their glasses between sips. The invasion of the Romans and discovery of the New World brought the introduction of other fruits and vegetables such as olives, tomatoes, sweet and chili peppers, and potatoes enriching the variety of tapas.
