History of French cuisine is an evolutionary - and revolutionary- process that could be seen as a sort of "Big Bang Theory" of food.
From the middle age royal banquets served "en confusion" with all the dishes brought at once to the table, to the modernist rules of nouvelle cuisine, French cuisiniers worked hard to bring their tradition to be one of the pillars of global cooking... and also to free themselves from the Italian influences of the past.
Each turning point in French history had its key reference in the kitchen, from Taillevent to Varenne, from Antoine Careme to Escoffier who, with his Guide Culinaire, started a revolution himself. Not only he established the new rules for the logistics in the kitchen but also went against the ancient regime of the heavy sauces and ultra-rich dishes in favor of more natural and light flavors.
Let's gather together at this traditional French bistro where art, food and a touch of Rive gauche, will help us to experience the taste of Paris and of France in an intimate friendly setting.
Street parking is recommended. The venue has a small parking lot in the back with very limited availability.
