Restaurants in Vancouver, Victoria and Whistler

Hi everyone,
my boyfriend and I are coming to Vancouver for two weeks after Christmas. We're doing the "typical" tourist route with a visit to Victoria and Whistler for skiing ;-)

We love to eat good food. Does anyone have some restaurant suggestions for us?
I like the places that are not too touristy and have their own atmosphere.
Maybe any other tips for things to do and see?
