The World on the Table: Peruvian Cuisine
Tigermilch - in Spanish „Leche de Tigre“ actually consists of a mix of lime juice and spices, and serves as basis for Peru's national dish „Ceviche“.
The particularities of the Peruvian cuisine have their origin in the country's geographical position, its history, its multicultural population and strong connection to the world. Not surprisingly, the cuisine from Peru is rich of an extreme diversity of savours, product of multiple influences from Spain, Asia and Africa. It's often described as a fusion cuisine for itself, as most of the well known specialities are a mix of local meat, fish and vegetable with herbs and spices from oversea, especially China and Japan.
The special concept at Tigermilch is to share the food and try as many dishes as possible; that's why portions might be smaller than in other places and it's recommended to order two or three different dishes - or rather tapas - per person.
