There is no menu ordering; the food "follows" the spirit.The Progression: As more bottles are ordered, the mezedes "upgrade" in complexity and rarity.Round 2-3: Fried seafood like kalamarakia (squid), saganaki (fried cheese), and fresh small fish like atherina.Round 4+: The "heavy hitters" appear, such as grilled octopus, shrimp, and local specialties like kolitsianos (fried sea anemones).The Shared Knife: Traditionally, only one knife is placed on the table, serving as a symbolic reminder of the workers who originally shared their snacks and split them equally.
